Otherworldly Sweet Potato Gnocchi with Garlic + Sage

All of the snow has melted, it’s sunny outside and dare I say warm…?! The weather here is insane, snowing and freezing one minute to blindingly sunny with warm breezes the next…weird. Oh well, I decided to take advantage of days like this and made these otherworldly sweet potato gnocchi with and tossed the gnocchi in a garlic butter sauce with lemon and sage. Absolutely delicious! Gnocchi have an unbelievable texture, like pillowy clouds inside your mouth, so delicate but adaptable to various sauces. They are da best thing ever.

Gnocchi are one of my go to comfort foods, and with the passing of Princess Leia recently…its been needed…sigh.

I think it needs to be said that it has been a weird year. There have been a lot of surprises (good and bad ones) that make closing out this year a welcoming site. I am looking forward to 2017 and all it has to offer! Do you have any goals for the new year? I think my main goal for 2017 is to go on more hikes and enjoy nature. Otherworldly Sweet Potato Gnocchi with Garlic + Sage
Easy and delicious, this recipe will not disappoint! Feel free to use plain or flavored gnocchi.

Ingredients
  • 1 package gnocchi
  • 2 tbsp butter
  • 2 cloves garlic
  • fresh sage
  • salt
  • black pepper

  • 1 package gnocchi
  • 2 tbsp butter
  • 2 cloves garlic
  • fresh sage
  • salt
  • black pepper
Instructions
  1. Bring water to a boil in a pot and add gnocchi. Cook for a few minutes and remove with a slotted spoon.
  2. Melt butter in a sauce pan and toss in crushed garlic and sage. Cook for a few minutes and add black pepper and salt. Squeeze lemon juice into the pan and cook for a couple more minutes. Toss in gnocchi and remove from heat.
  3. Serve and enjoy!
