Crispy Kale with Garlic + Balsamic Vinegar

Hai guys! First…where has Fall gone?! Or was it ever here?!?! The weather has been insanely nice in Colorado, warm and sunny….no snow and plenty of green trees…and its November. Weird…

But, I will say the benefit of this weather is the extension of the farmers market and the availability of fresh produce. Which is awesome! I’m dropping a recipe for crispy kale with garlic and balsamic vinegar that is super easy and quick to make. My favorite kind of recipe.

Due to the lack of snow, it has eliminated any chance that I will go “skiing” any time soon…thank gawd. Not ready for that adventure yet, but would totally be open to going to a ski lodge that has hot chocolate…yum. I vote for that option!

Back to the crispy kale, I love kale…baked, sauteed, roasted, etc. You can impart a lot of flavor into these leafy greens. I’m also a garlic lover so I will always throw in some garlic with my vegetables. The balsamic vinegar adds a nice balance of flavor and should not be skipped! The best part is the crunch from the crispy ends…delicious. These crispy and garlicky kale make for a most delicious side dish for any meal.

Ingredients
  • 1 bunch kale
  • 2-3 cloves minced garlic
  • 2-3 tbsp olive oil
  • 1-2 tbsp balsamic vinegar
  • fine sea salt
  • black pepper
Prep Time 5 minutes
Cook Time 4-5 minutes

Ingredients
  • 1 bunch kale
  • 2-3 cloves minced garlic
  • 2-3 tbsp olive oil
  • 1-2 tbsp balsamic vinegar
  • fine sea salt
  • black pepper
Instructions
  1. Mince the garlic and roughly chop the kale. Add the olive oil to the pan and heat to medium. Add garlic and saute and be careful not to let it burn. Add the kale and increase the heat to medium-high.
  2. Cook down for a few minutes, then season with salt and pepper. Let it cook for a few more minutes. In the final minute of cooking, add the vinegar and toss. Remove from pan and enjoy.
