Fudgy Peanut Butter Brownies

Oh hai, how are things? Things for me are good, especially because I bring you a recipe with one of the best combos — peanut butter and chocolate. Peanut butter brownies = Yass kween. I really really enjoy baking desserts and I think I’ve gotten pretty good over the years. Family and friends have been the recipients of all of my baking experiments and they seem to enjoy the bakes. I will confess that some of them have been good…and some of them…we’ll say they’re still in the R&D phase…

I think that’s the best part of baking anything really, is getting to see other people enjoy your creations, for me that’s the most satisfying part of the process. And they make great gifts too, there’s something about seeing the joy on someone’s face when you hand them something you made that’s really special.

Before I delve too much into talking about these peanut butter brownies (which are amazing!), let me talk to you briefly about my travels! I went to Iceland and it was amazing!!! What a trip, what a place! These pictures don’t do it justice but I really had a great time traveling the country with friends and getting to explore and go on adventures. It really is that green in many places, most of the green stuff is moss and lichen that are on volcanic rock, there isn’t much in the way of grass or trees there, but its what makes it so cool. A really unique natural landscape. Iceland also has a ton of water falls and natural springs, you feel like you are being transported to Middle Earth and really forget where you are. Also, fun fact…several Game of Throne scenes were filmed in Iceland. That was really coo,l to see places where Arya (one of my faves) had travelled in Westeros. In the last picture is Icelandic rye bread, we went to this outdoor spa where they use the geothermal energy produced from the magma underneath. They bury the dough and let it cook for several hours, you dig it out and enjoy! It is seriously the best rye bread you will ever get your hands on…like seriously.

But yes…must focus…brownies. So these brownies have been in the works for a while, I’m proud of this recipe because it checks off a lot of boxes. You get the fudgy and deep chocolate flavor, the right thickness, a nice thin crackly layer on top, and the brownie doesn’t crumble and fall apart upon contact with your face. It’s everything you could want in a brownie plus the bonus addition of peanut butter, because really, you should treat yourself.

Ingredients
Dry Ingredients
  • 1 1/2 cup all purpose flour
  • 1/2 tsp salt
Chocolate Base
  • 2 cup semisweet chocolate
  • 3/4 - 1 cup cocoa powder
  • 3 sticks unsalted butter
The Rest
  • 2 1/2 cup cane sugar
  • 6 eggs
  • 2 tsp vanilla (the good kind)
The Extra
  • 1/2 - 3/4 cup semisweet chocolate
  • 1 cup peanut butter

  • 1 1/2 cup all purpose flour

  • 1/2 - 3/4 cup semisweet chocolate
  • 1 cup peanut butter
Instructions
  1. Preheat oven to 350 F. Grease a 9x13 glass baking dish and put to the side. Combine the flour and salt in a bowl and set aside.
  2. Take all of the "Chocolate Base" ingredients and dump into a sauce pan and turn heat on low. Stir until everything is melted and combined, then take the pan off the heat to cool down.
  3. Add sugar and eggs into a large bowl and combine using an electric mixer. You will want to go at a medium-medium high speed for 5 minutes. You want the mixture to be fully combined and a little fluffy. Beat in the vanilla.
  4. With a spatula, you will add the dry ingredients and combine. Then slowly add in the chocolate mixture until fully combined. Then add in the remaining chocolate.
  5. Pour mixture into the prepared glass dish and swirl in the peanut butter, doesn't need to be pretty. Bake the brownie mixture in the oven until middle is set, about 45-55 minutes. Once baked, pull out the brownies and set aside for 30 minutes to cool. Then drizzle extra peanut butter and enjoy.
Recipe Notes

Avoid using peanut butter with added sugar, you really want peanut butter that is just peanuts and maybe salt, but that's it! It will make these brownies go weird...
